Calvados Berneroy is made from a variety of over 180 cider apples grown and harvested in Autumn in Normandy, the apples are pressed and due to natural fermentation produce cider. In accordance with the rules and traditions of Calvados production the cider is distilled once, this single distillation ensures a fruitier taste and allows the aromatics from the apples to remain. The clear distilled spirit is then added to French oak barrels for a minimum of two years and up to six years. Over time the Calvados develops a more complex flavour, vanilla, butter, liquorice and of course baked apples are now present.
