A cognac becomes a Cuvee when it falls outside of the standard nomenclature of VS VSOP and XO. Often a producer will create a cognac that they feel deserves its own recognition, this is where the Cuvee title will be used.
Courvoisier’s Napoleon for example is aged beyond what would be expected of even an XO and is therefore given the Cuvee name. Often a cognac may be aged between VSOP and XO and is given this title.
