Once the most popular spirit on the planet Irish whiskey was one of the earliest distilled drinks in Europe, a variation of what we now know was first documented around the 12th Century. It is believed the origins of whiskey lie in the Mediterranean techniques for distilling perfume. Adapted and modified, Irish monks then began producing a drinkable spirit. Prohibition of the 1920s all but destroyed the Irish Whiskey market, so much so that currently only a handful of distillers remain in operation in Ireland.
Characteristically Irish Whiskey is smoother than its Scottish cousin, it is distilled three times compared to twice, there are of course exceptions to every rule and the peated Irish malts are the exceptions. It is likely you know more Irish whiskies than you think with huge names like Jameson and Bushmills taking centre stage.
